The secret's not the recipe,
it's gotta be the cooks ...
Eggs McKuzma is a scrambled egg dish that Dad would make for us for breakfast on special occasions. It's not hard to make, and it's not pretty, but it sure is good. The secret is the bread. It adds fullness to the dish that is always surprising.
Ingredients:
Eggs (2-3 per person, with a bit of milk to help w/ the scrambling)
Toppings (green pepper, mushrooms, any other leftover vegetables, cooked meat, tofu)
Miscellaneous (leftover pasta, anything in the fridge)
Cheese (any kind, shredded or cubed)
Condiments (salsa, hot sauce, soy sauce, whatever you choose)
Bread (bread, cornbread, tortillas, pita, pizza crust)
Cooking: Butter or spray pan liberally, chop up all toppings or miscellaneous items, heat up over medium-high heat until you can start smelling them and they are softening up well. Add condiments as you like. Add bread, cubed, to pan and throw in some more butter or spray the bread w/ cooking spray. Cook until the bread toasts up or browns. Add eggs, scraping bottom of pan gently to prevent burning while cooking eggs evenly. When eggs stop looking wet, fold in the cheese. When it melts, add salt and pepper, and you're done. Serve in bowls, not plates.
